Blooming Quesadilla Rings

For paneer marination:
Paneer - 1 kg
Cream Cheese - 4 tbsp
Cajun spice - 2 tbsp
Cumin powder - 2 tsp
Smoked paprika powder - 2 tsp
Fresh coriander leaves - 2 tbsp
Salt & pepper to taste

For the filling:
Onions, sliced - 1/2 cup
Red peppers, sliced - 1/4 cup
Green peppers, sliced - 1/4 cup
Jalepenos, chopped - 2 tbsp
Coriander leaves, chopped - 1 tbsp
Lemon juice of 2 lemons
Smoked paprika powder - 1 tsp
Salt & pepper to taste
Olive oil - 2 tbsp
Other ingredients:


Refined Flour Tortilla, cut into half - 30 pcs
Sharp Cheddar cheese - 1 cup
Queso Fresco cheese - 1/2 cup
Mozzarella cheese - 1 cup
Salsa - 1 cup
Chopped Coriander leaves to garnish

Method:
1. Take all the marinated ingredients including powdered spices in a bowl with cream cheese, season to taste & mix well.
2. Add paneer to the marination and let it coat.
3. Grill the paneer on a hot pan until it sears on both sides.
4. Add the peppers, onions and the remaining filling ingredients along with the grilled paneer and mix well. Keep it aside.
5. Let the filling rest in the fridge or 10 mins.
6. To make the tortilla, use the dough made of flour, roll it into 6 inch diameter circles and grill it until they are seared on both sides.
7. Next take a flour tortilla & cut it into half.
8. Add a spoon of the filling & some cheese.
9. Then roll into a cone, repeat the process to make about 30-35 cones.
10. Preheat the oven to 180 degree celsius; in a baking tray, place a bowl in the centre & arrange the cones in the shape of a blooming flower.
11. Add cheddar & mozzarella cheese at each level on the assembly.
12. Bake in the oven until the cheese has melted.
13. Replace the empty bowl in the centre with a bowl full of salsa.
14. Serve hot & garnish with chopped coriander.

Quesadilla Triangles
Capsicum (Cut into strips)
Red peppers (Cut into strips)
1 Red Onion (sliced)
1 tablespoon Olive Oil
1 tablespoon Butter
Chopped garlic
Salt and Pepper, to taste
Cheddar cheese
Mozarella cheese
Tortilla
Method:
1. In a bowl, add cream cheese spices and herbs, seasoning and mix well.
2. Mix the paneer chunks in the marinade until they are coated.
3. On a hot pan, sear the paneer on both sides until golden brown.
4. Add bell peppers, onions and the remaining ingredients for the filling including cheese.

Cocktail Recipe: Kolkata Highball
50 ml Dewar's 2
25 ml fresh lemon juice
20 ml Ginger, cardamom and
cinnamon syrup
Soda water
Ice
Mint (for garnish)
Method:
1. Shake Dewar's 12, lemon and syrup.
2. Double strain into a highball glass with ice.
3. Top with soda and garnish with mint sprigs.
4. Heat white sugar and water in a pot
with the ginger, green cardamom and
cinnamon.
5. Simmer gently for 20 minutes then strain into a bottle.
