MASCARPONE CREAM
Ingredients:
3 egg yolks
100 g granulated sugar
160 g mascarpone
1 C heavy cream
1 tsp vanilla bean paste
1. Fill a medium saucepan with water about half way, and place over medium heat. Let the water come to a light boil.
2. In a medium steel bowl, combine the egg yolks and sugar.
3. Place the bowl over your bain-marie and whisk together.
4. Cook the egg yolk and sugars over low heat, for around 6-8 minutes, until the mixture becomes light and looks paler in colour.
5. Remove from heat and add mascarpone and vanilla bean to the bowl.
6. Using a hand mixer, whip the mascarpone into the egg yolk custard.
7. Once it has fully combined, set aside.
8. In another bowl, add one cup of heavy cream and whip up.
9. When the cream has whipped, fold it into the mascarpone custard in two increments.
10. Fold gently to lose as little air from the whipped cream as possible.
11. Once the mascarpone cream is finished, place it in the fridge to chill for 20-30 minutes before assembling.
EASY TIRAMISU (makes 5-8 pots depending on size)
Ingredients:
20 lady finger cookies
1 C coffee (1/2 C coffee liqueur and 1/2 C espresso or strong coffee)
1 batch mascarpone cream
To assemble:
1. Pipe the mascarpone cream on a Silpat and freeze for an hour.
2. Layer the dessert vessel with lady fingers.
3. Pour coffee mixture over the cookies.
4. Layer with a generous amount of mascarpone cream.
5. Repeat these steps until your vessel is full.
6. Cut circles from the frozen mascarpone cream and dust with cocoa powder.
7. When you're ready to serve, place one mascarpone disc on each pot.
